What you need

1 tbsp fresh rosemary

1 ½ tsp kosher salt

1 tsp garlic powder

1 black pepper

2 tbsp olive oil

1 shallot
3 clove garlic

¼ cup sundried tomatoes

½ lb orzo

⅓ cup white wine
3 chicken broth
½ cup grated parmesan cheese

1 burrata
1 fresh basil leaves
Instructions
Step 1: Prep the Chicken 1 Pat the chicken thighs dry with a paper towel. 2 In a small bowl, combine rosemary, salt, garlic powder, black pepper, and olive oil. Brush the mixture evenly over both sides of the chicken thighs. Step 2: Sear the Chicken 4 Heat a large, deep skillet or sauté pan over medium-high heat. 5 Place the chicken skin-side down in the pan and sear for 5–6 minutes per side, or until deeply golden and crispy. Remove the chicken from the pan and set aside. Step 3: Build the Base 7 In the same pan, add the chopped shallot and garlic. Sauté for about 1 minute, until fragrant. 8 Stir in the sun-dried tomatoes and orzo, toasting the orzo for 1–2 minutes until lightly golden. Step 4: Deglaze the Pan 10 Pour in the white wine (or chicken broth if substituting). Use a wooden spoon to scrape up any browned bits from the bottom of the pan. 11 Add the chicken broth and stir to combine. Step 5: Cook the Chicken & Orzo 13 Return the chicken thighs, along with any juices they’ve released, to the pan. Nestle them into the orzo mixture. 14 Reduce the heat to medium and cook for 5–12 minutes, stirring occasionally, until the orzo is tender and the chicken is fully cooked (internal temp 165°F/74°C). Step 6: Finish with Cheese 16 Stir in the grated Parmigiano. 17 Top with whole slices of burrata and fresh basil leaves. Let the burrata melt and bubble for 1–2 minutes.View original recipe
