0 Preheat the oven to 400°F (200°C) and line a sheet tray with parchment paper. 1 Finely grate the Parmigiano-Reggiano using a microplane or the small holes of a box grater. 2 Portion about 2 tablespoons of grated cheese per frico and gently shape into loose 3-inch rounds on the parchment-lined tray. Do not pack the cheese down. Leave space between each round. 3 Bake for about 6 minutes, until fully melted and lightly golden at the edges. 4 Remove from the oven and let the frico sit on the tray for 2–3 minutes to set and crisp. 5 Carefully lift with a spatula and let cool completely before serving.View original recipe
