What you need

tsp ground cinnamon

cup all purpose flour

cup salted butter

tsp ground nutmeg

cup granulated sugar

pinch kosher salt

fl oz fresh lemon juice

tsp pumpkin pie spice

cup water

tsp vanilla extract

tsp sugar

lb red delicious apple
tbsp cornstarch
Instructions
Make the Dough 1 Whisk flour, salt, and sugar. 2 Cut in cold salted butter until pea-sized pieces remain. 3 Add cold water and gently mix until dough comes together (don’t overwork). 4 Press into a disc, wrap, and chill at least 1 hour. Make the Apple Filling 6 Peel and slice apples ¼ inch thick. 7 Toss with sugars, cinnamon, nutmeg, pumpkin spice (optional), salt, lemon juice, vanilla, and flour/cornstarch. 8 Rest 10 minutes. Make the Crumb Topping 10 Mix flour, both sugars, cinnamon, and salt. 11 Add cold salted butter and crumble with fingers until sandy with some clumps. Assemble the Pie 14 Roll dough into a 12-inch circle and place in a 9-inch pie dish. 15 Add the apple filling and dot with salted butter. 16 Cover with crumb topping. 17 Chill the assembled pie for 10–20 minutes. Bake 19 Bake at 425°F for 20 minutes. 20 Reduce heat to 350°F and bake 35–45 minutes longer, until golden and bubbling.
